You’re supposed to pick them after the first frost so they are at their sweetest. But for jelly and jam just add sugar to taste.
I will pick some now and some after the frost and dry those for tea. I would love to find a recipe for a Polish rose jam I tasted once and was divine.
I have three rose bushes at the garden and one produces these plump hips. The other produces beautiful and perfumed flowers. The third does none of either. I wonder why it was planted..?
